A Taste of Hawaii

 

Garlic ChickenI was chatting with my friend Liz a few nights ago about some recipes, and the conversation made me think of garlic chicken, yes the famous Hawaiian garlic chicken. If you’ve been there, you’ll know what I’m talking about.

Back when we lived on Oahu, we had a lot of garlic chicken. You can get it at many restaurants, but our favorite (and many locals’ favorite as well) is from Fatboys. Mmmm, I can smell it now! The chicken pieces are fried then dipped in this amazing sauce, and usually served over rice. Rice is another staple in Hawaiian cuisine, which isn’t surprising since the islands are heavily influenced by Asian cultures and cuisines.

Our conversation inspired me to create a home-cook friendly version of this ever-so-popular dish. Typically the recipe requires deep frying, but instead I decided to try sautéing with a combination of olive oil & vegetable oil.
