To my amazement, it was absolutely divine. If you’ve been following me for a while, you might recall my go-to roast chicken recipe. Well, I can honestly say that Jamie Oliver’s better in every way. You don’t have to brine it because it cooks in the broth of milk and spices. You don’t have to get your hands all sticky with rubbing the chicken with butter, and you don’t have to worry about the meat being too dry.
I made a simple change because my son is allergic to dairy. So no milk for us. I used almond milk instead, and it turned out beautifully.
