Does anyone know what this is?!
These are Okinawan sweet potatoes. They are PURPLE! After they are cooked, they turn to an even darker shade, but don’t be put off by the weird color because they taste amazing!
This is my first time cooking them, so I’ll be sharing a recipe soon. I’ve never seen them till I moved to Hawaii–the land of many new foods.
Have you seen them on the mainland? Anyone want to share a good recipe? 🙂
